Zucchini Hommus – Dressing – Dip
1 C peeled zucchini
¼ C lemon juice
1 TB flax oil
4 cloves garlic
½ tsp salt
½ tsp cumin
½ C hulled tahini
Add all ingredients to a food processor and blend until smooth
Serve with Zucchini chips.
Variation: Mushroom Mud – exchange mushrooms for zucchini and black tahini paste for hulled tahini – can also add baby spinach.
You can use this as a salad dressing or pasta sauce.
