Watermelon Gazpacho Soup

Ingredients

3C watermelon seeded & pureed in a blender,
1C watermelon diced into small cubes, 1C seeded tomato, 1C peeled, seeded & diced cucumber,
½ red pepper diced, juice of 1 lime, 1 C coriander leaves, 1tsp minced fresh ginger, chili to taste,
1 spring onion cut on the diagonal, salt to taste
Method

Place all ingredients in a large bowl and stir together, place portions in smaller individual bowls and decorate

Decoration kaffir lime leaves & chili finely sliced and lemon grass

This is a delightfully light soup/starter for a summer meal.
