Cucumber & Pineapple Soup or Smoothie
4 medium cucumbers
1 medium pineapple
1 small onion or 6 spring onions
1 small knob of fresh ginger
1 clove garlic (optional)
3/4 C freshly squeezed lemon &/or lime juice
Peel and chop pineapple, cucumber, onions, ginger garlic. Place all ingredients in a food processor and blend until smooth.
Use additional pineapple, spring onions and julienne cucumber as decoration.
This is such a fabulous combination of favours, GR8 as a soup or simply whizz it altogether and use it as a savoury smoothie to go.
