 Mango & Pineapple Soup or Smoothie

Ingredients

Juice of 2 lemons,
2 limes, 2 oranges, or your choice of citrus
4 mango’s,
1C chopped pineapple,
1TB fresh chopped ginger,
1 small onion, salt to taste

Method

Juice lemons

Peel limes and oranges, mango’s, pineapple and ginger.
Blend all ingredients to a smooth puree. You may need to do this in smaller batches depending on the size of your blender.

Variations: Your choice of fruits in season.

Decorate with thinly sliced chilli, kaffir lime leaves, julienne snow peas & spring onions.
