Cucumber Noodles Low Calorie Meal

With everyone concerned about their waist line these days, I have developed a few low calorie meals that you can all enjoy, without any guilt or worry about adding unnecessary kilo’s 🙂

Cucumber Noodles – Low Calorie Meal

Ingredients

400g Cucumber, 1 average size – @ 10 cal per 100g = 40 cals

200g of Eggplant/Aubergine – @ 20 cal per 100g = 40 cals

100g Red Capsicum/Bell pepper – @32 cal per 100g = 32 cals

5 cherry tomatoes – @ 5 cals per tomato = 25 cals

2 spring onions – @ 10 cals per onion = 20 cals

lemon juice of 1 juicy lemon

salt to taste

Total calories 157 – please note this calorie calculation is only approximate, but will serve as a rough estimate for the meal.

Method

Eggplant sauce

Trim and cube eggplant, but do not peel. Steam until soft.

Place into a blender/processor, with lemon juice and salt and whizz until smooth.

Noodles

Using a spriooli make noodles from the cucumber and place in a large serving bowl.

Roast or grill red peppers, remove skin and slice into strips

slice spring onions on the diagonal

Slice cherry tomatoes in halves

Assembly 

Pour Egg plant sauce over noodles, then layer capsicums, tomatoes, spring onions
