I have no doubt you will adore this combo of fresh, alive flavours and textures. Using a combination of raw and lightly steamed veggies, this recipe packs a wonderful mouthful of flavour.
The best part of this recipe is it only has approx. 125 calories, so it is kind on the hips.
Bok Choy, Mushroom and Pumpkin with a Zingy green sauce
Bok Choy 180g @ 13 calories per 100g = 24 cal
Mushrooms 160g approx 3 large ones @ 14 calories per 100g = 22 cal
Zucchini 100g approx 1 medium one @ 16 calories per 100g = 16
Spring onions x 2 @ 10 calories per onion = 20
Juice of 1 juicy lemon
Salt to taste
Total calories approx. 125
Wash and trim veggies, peel pumpkin.
Cut stem from leaf of the Bok choy, slice the stem into strips, and place leaves in a blender.
slice mushrooms into strips
cut pumpkin into small cubes
cut spring onions into small bits
cut zucchini into small cubes
Place bok choy leaves, zucchini, dill, spring onions, lemon juice and salt to taste into a blender, whizz until smooth.
Lightly steam, pumpkin, bokchoy and mushroom strips, until tender.
Place all the steamed veggies on a serving plate and pour the zingy green sauce over the top 🙂
