Zucchamole – Raw Low Calorie Recipe

Ingredients 

2 zucchini’s – do not peel – 300g @ 16 calories = 48 calories

Lemon juice from 1 juicy lemon

Salt to taste

Method

Wash & trim zucchini’s, place in a blender with lemon juice and salt to taste

Blend until smooth

Total calories 48 🙂

Serve as a dip, sauce over zucchini or cucumber pasta, or quinoa.
