Carrot and Apple Soup

Ingredients

6 carrots, chopped  approx. calories 500g @ 35 calories per 100g = 175 calories

1 tablespoon chopped onion approx. 10 calories

1 small avocado [this can be replaced with 1/2 C macadamia nuts] these ingredients are optional as they add an enormous calorie load to the recipe.

1 small avocado = approx. 300 calories or 160 calories per 100g

1/2 C macadamia nuts will add a whopping 500 calories – 718 calories per 100g – 1TB = 88

1 large apple, peeled – 50 calories per 100g or 1 medium size apple = 50 calories

salt to taste

cinnamon to taste, start with 1 tsp

cumin to taste, start with 1 tsp

3C water

Total calories without avocado or nuts = 235 calories

Total calories with avocado = 535 calories

Total calories with 1/2C macadamia nuts = 735 calories

Total calories with 1/2C macadamia nuts and a small avocado = 1035 calories

 Method

Combine all ingredients in a blender or food processor and blend until smooth
