Zucchini, Red Pepper & Pumpkin – Low Calorie Recipe
Zucchini 250g @ 16 calories per 100g – 40 calories
Roasted Red Bell pepper 100g @ 32 calories per 100g – 32 calories
Cherry Tomatoes x 5 – approx. 5 calories per tomato – 25 calories
Pumpkin 400g @ 26 calories per 100g – approx. 100 calories
Spring Onion approx. 10 calories per onion – 10 calories
Salt, cracked black pepper and balsamic vinegar to taste
Feel free to add a dash of freshly squeezed lime juice for extra zing !!
Approx. total calories = 207
Wash and trim zucchini’s, then grate them into a serving bowl
Peel skin from roasted or grilled red bell peppers and slice them into strips
Chop spring onion very finely
Slice cherry tomatoes into halves
Peel and deseed pumpkin, then steam until soft and mash, adding salt, cracked black pepper and balsamic vinegar
Assemble red peppers, tomatoes, onion and mashed pumpkin over grated zucchini.
With only approx. 200 calories for the whole dish, you can eat with no fear of adding inches to your waist line 🙂
