Spinach, Red onion and Pumpkin

Ingredients

Spinach 350g @ 23 calories per 100g = approx. 80 calories

Pumpkin 400g @ 26 calories per 100g = approx. 100 calories

Red onion 1 small approx. 10 calories not really worth counting πŸ™‚

Roasted Red bell pepper 100g @ 32 calories per 100g = 32 calories

Cherry Tomatoes x 5 @ approx. 5 calories per tomato = 25 calories

Salt, cracked black pepper and balsamic vinegar to taste.

Total approx. calories 250 πŸ™‚

Method

Wash and trim spinach, steam until soft or leave raw, chop into a serving bowl

Peel and deseed pumpkin, steam until soft, mash with salt, cracked pepper and balsamic vinegar to taste

Roast and de-skin red bell peppers, slice into thin strips

Thinly slice red onion

chop tomatoes in half

Assembly

Place spinach in a serving dish

Layer, mashed pumpkin, red pepper, red onion and Β tomato
